Turkey Curry Salad

Serves 4 to 6
INGREDIENTS
4 cups leftover roasted turkey, shredded or chopped
1 cup mayonnaise
1 1/2 tsp curry powder, or more
1 Tbsp soy sauce
1 Tbsp lemon juice
black pepper, as desired
salt, as desired
chopped celery, as desired
toasted almonds, as desired
dried cranberries or currants, as desired
mixed baby greens, as needed
DIRECTIONS

Mix all of the ingredients together and taste. Adjust seasoning as needed.

Enjoy over a bed of lettuce or in a sandwich.

Note: you can easily make this recipe with chicken as well!
