GLUTEN-FREE CHOCOLATE
CHIP & PEANUT BUTTER COOKIES

Makes 12 cookies
Ingredients

1 cup peanut butter
1 egg
1/2 cup brown sugar (or coconut sugar)
1/2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1/2 cup dark chocolate chips

Preheat the oven to 350ºF. Grease a baking sheet and set aside.

Whisk together the egg, brown sugar and vanilla extract. Add the remaining ingredients and combine with a sturdy but flexible spatula. Scoop the dough into small spoonfuls onto the prepared cookie sheet.

Bake for 9 minutes and remove from oven. If they look soft, don't worry as they will become more firm as they cool. If you over cook them, the burnt peanut butter will become more bitter in flavor. Let cool and enjoy.
NOTE: In order to keep these cookies as healthy as possible, be sure to buy peanut butter that only has nuts and salt! A lot of peanut butters are loaded with highly processed oils and sugars. I get it that natural and organic peanut butter is a lot more expensive, but trust me your health is your greatest advocate. Have fun making these cookies and feel free to sprinkle malden salt on the top before baking them or press chocolate kisses into their centers after baking while still warm.
