Oat Banana Bread

Makes 1 loaf
INGREDIENTS
5 Tbsp salted butter, browned
2 very ripe bananas
2 large eggs
3/4 cup maple syrup 
1 tsp vanilla extract
1/2 cup freshly squeezed orange juice
1 cup all purpose flour
3/4 cup quick oats
2 tsp baking powder
1 pinch of sea salt

 
DIRECTIONS
  1.  Preheat your oven to 350ºF. Line and grease an aluminum tin loaf pan. 

  2. Brown your butter slowly over medium-low heat in a small sauce pan, mixing often. Once very dark in color, remove from heat and let cool for 10 minutes.

  3. Whisk together your bananas, eggs, maple syrup and orange juice. Slowly stir browned butter, mixing as you pour . Fold in the dry ingredients and mix with a spatula to combine well. 

  4. Scrape the batter into your prepared bread loaf and let the batter sit in the loaf loaf pan for 15 minutes, allowing the oats to absorb some of the access moisture in the batter.

  5. Place into the oven and bake for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. If using a thermometer, it should reach 190ºF.

Note: make this recipe instead of conventional banana bread. The alternative sugar, extra egg and whole grain oats will lower the "dreaded" blood glucose spike after eating something sweet.
