Simplified Granola 

Makes 4+ cups
3 cups oats
1 cup mixed dried fruit(s)
1/2 cup mixed nuts
1/2 cup dried coconut
2 Tbsp mixed seeds 
1 tsp cinnamon 
1/4 tsp nutmeg or cloves
1 generous pinch of salt
2 tsp espresso grounds, optional
1 tsp vanilla
1/2 cup olive oil 
1/2 cup maple syrup

  1. Preheat your oven to 275ºF. Line a large half-sheet sized baking sheet. 
  2.  Mix all of the ingredients together in a very large bowl. Transfer to baking sheet and slowly roast for 38 to 45 minutes. Let cool fully before mixing and storing, to maintain granola that comes out in clumps (if you do not want chunky granola, mix your granola at the 19 minute mark (this will also ensure your granola comes out evenly baked). 
*Note: my favorite combinations are 1) dates/almonds/sesame seeds 2) apricot/cranberries/pistachios/pumpkin seeds and 3) raisins/walnuts/flaxseeds
