Brown Butter Banana Bread

Makes 1 loaf
INGREDIENTS
5 Tbsp butter
2/3 cup brown sugar
1 egg
1 tsp vanilla extract
1/2 cup orange juice
3 bananas, very ripened
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 pinch sea salt
DIRECTIONS

Preheat your oven to 350ºF. Line and grease a tin loaf pan*.

Heat the butter in a sauce pan until lighting browned, stirring often. Remove from heat, transfer to a bowl and let cool for 10 minutes.

Meanwhile, mash the brown sugar, egg, vanilla, orange juice and bananas until well combined. Slowly add the browned butter. Fold in the flour, baking powder, soda and salt with a spatula.

Transfer to your greased loaf pan and bake for 50 to 55 minutes, or until knife inserted into the center comes out clean. Let cool for 15 minutes. Remove from pan and continue to let cool.
*Note: if using a glass bread pan, the loaf will come out far less moist and the sugar in the crust will not crystalize so beautifully
