BLACK LENTIL POWER BOWL

Ingredients
DIRECTIONS
1 handful micro greens or arugula
1/2 cup cooked chicken breast
1/2 cup cooked black lentils
1/2 cup cooked farro
1/4 cup chopped or grated apple
1/4 cup dried cherries
1 stalk celery, chopped
2 Tbsp roasted walnuts
1 Tbsp hemp seeds
2 Tbsp olive oil
2 Tbsp apple cider vinegar
1 Tbsp raw honey
1 Tbsp feta cheese
1 Tbsp fresh cilantro
1 dash sea salt
1 pinch black pepper

To make your dressing, combine all of the ingredients from the second column into a small blender and blend until well incorporated and smooth. Taste and season with salt as needed.

Using a large salad or pasta bowl (or dish of preference), arrange the greens, chicken, lentils, farro, chopped apple, cherries and chopped celery as desired. Garnish with the roasted walnuts and hemp seeds and then pour your prepared sauce over your bowl. Enjoy immediately.

You can also toss your ingredients together with the sauce before garnishing with nuts and seeds, if you prefer it to be more incorporated.
